With this background of experience and knowledge Mr. Cas- ter reviewed the history of bread making from B.C. times to the present. In time other ingredients were added to the first five to give bloom to appearance and for other reasons. In the old | countries, and later in the new | countries, as population increased, | mass production and machinery re- | quired in large bakeries Shanged | the fermentation action necessary for light loaves. Different methods of producing attractively packaged and various varieties of bread have surely made the baking industry big business, where the Govern- ment takes a hand in setting forth what shall and shall not be used in the lowly loaf of bread. It does a fine job of protecting the pub- lic in many ways. As in many | other foods today, flour now seems | to require to be fortified and the Government looks after this also. | Government inspection also assures the consumer of sanitary conditons ' in all departments of the bakery.
