As his Christmas greeting to readers former Montrealer Ted Saucier, of the Waldorf-Astoria, gives for the first time the recipe for cooking turkey given him by the | late Auguste Escoffier, famous chef. Here's 'the Escoffier method as told exclusively by Ted Saucier: A few hours ahead of time, pre- pare a broth' for the dressing and basting of the turkey. Ingredients for broth and dressing: the neck, liver, heart and gizzard of the tur- key, 2 large onions, 2 heads: of cel- ery, 1 quart of cold water, a sprig of parsley, 8 ounces of butter, dry tread, 1 teaspoon of powdered sage and salt and pepper to taste. To make broth chop celery leaves fine, cut the stalks and hearts into %- inch squares. Place half of the cel- ery in a pot with a quart of cold water. (Reserve the other half for the dressing.) Add the gizzard, cut into 3 pieces, the neck, liver and heart, 1 large white onion, chopped fine, parsley chopped, salt and pep- per. Cover and simmer for 3 hours. Dressing: Strain broth through colander. Reserve onion and celery. Pick meat from neck and chop to- gether with the giblets. In a skillet, slowly. melt butter the size of an egg (about 2 ounces). Brown one large 'white onion, chopped. Add chopped neck meat and giblets, and brown over slow fire. Then add ingredients strained out of the broth, the reserved chopped celery, dry bread broken up, 1 teaspoom powdered sage, salt and pepper to taste. 'Mix thoroughly over a slow fire, using half of the broth for moistening. Roasting the Turkey: Clean; stuff and truss turkey. Rub the entire surface liberally with butter. Sprinkle with salt and pepper. After the turkey has been in the oven at 350 degrees F. (moderate) for about 20 minutes, baste every 15 minutes, using the balance of the broth with 4 ounces of butter added . Allow 20 mffutes to the pound for roasting. Gravy: Remove turkey and place pan on top of the stove over an open flame. Add the balance of the broth, or, if no broth remains, add 1 cup of cold water. Bring it to a high fire. Thoroughly scrape and mix whatever dried essence adheres to the sides 'of the pan. This will dissolve in the pan gravy. Rectify seasoning.
