As for buying, you must be- ware. Careful buying is a must at the prices we will be pine this year. Be sure you buy your bird from a reliable source; from the man who raised him or from a dealer who knows the producer. Hen turkeys have 'much thicker breasts, hence a higher proportion of breast meat, but are never very large birds, In my youth I had a nagging fear when I roasted a chicken or turkey of drying it out too much. It is an easy thing to do too-- especially when the roasting is done in an open pan. Yet this is exactly what I am advising you to do today--roast the bird in an uncovered pan at a low temperature =no higher than 300 deg. F. However there are cooks who will want to put the lids on their roast- ers to avoid basting and drying out, and I have often used this method. Have your marketman clean the bird. Goodness knows it takes long enough at home to even singe and wash and inspect the big fellow. Turkey Stuffing For a medium-cized turkey you will need from 6 cups soft bread crumbs up to all the soft crumbs from one loaf bread. Or if you use cooked rice in place of some of the bread about 4 cups crumbs will do. Saute 4 slices smoked side bacon finely chopped with 1 table- spoon each minced parsley, onion and 1 teaspoon grated lemon rind. Saute these slowly until bacon is barely cooked and onion is soak- ed with the fat. 'Add to the crumbs and rice; and 1% to 2 teaspoons salt, 1 to 2 teaspoons mixed herbs such as sage, marjoram, thyme, or poultry seasoning, and if you like grating of nutmeg. If you want the stuffing moist, add a little hot milk. It is now ready to stuff into jhe bird. Sew up or skewer open- To Truss Bird (I have received a special re- quest for details for this). Draw thighs close to body and hold by inserting a long skewer under mid- dle joint, running it through the body, and out other side. Place wings close to body with tips twist- ed toward back and hold by insert- ing another skewer. Draw neck Skin under back and fasten with small skewer. Tie drumsticks with long string and tie secumely to tail. Cross string attached to tail piece and draw around each end of the Jower skewers. Fasten around skew- er in back of neck. Sprinkle the skin with salt, and cover breast with about 6 slices side bacon if turkey is roasted in an open pan. Roast at 300 deg. F., about 18 to 20 minutes to the pound. This method requires about 4% hours for a 10.1b. Bird.
