10 TheThe South Marysburgh MirrorMirror Gazpacho A Soup for Summer By David Larkin With the arrival of the tomato season, this recipe for a cold soup is a great way to make the most of the excel- lent County produce stands. Mind you, when my son and his then wife were running the Milford Bistro/Coffee Gallery they had one frac(cid:415)ous customer who insisted on having it served hot! 1 small onion, chopped 1 cup peeled and diced fresh tomatoes 3 cups vegetable juice (Garden Cocktail or V8 preferred) 1/2 cup diced green pepper 1/3 cup French dressing 1/2 cup diced celery 1 Tbsp. lemon juice 1/2 cup diced cucumber Salt and cayenne to taste 1/2 clove garlic (at least) Tabasco Sauce Place all vegetables and garlic in blender with 1 cup vegetable juice or equivalent. Blend un(cid:415)l mixture is smooth. Add French dressing, lemon juice, salt and cay- enne with remaining tomato juice. Chill thoroughly. Serve very cold with small bowls of cubed tomato, celery, green pepper and cucumber, to be sprinkled over soup. Serves 5-6. The Assembly of Gentlemen The announcement that the County's Community Devel- opment Department had ini(cid:415)ated a shu(cid:425)le bus service between Sandbanks Provincial Park and the downtown cores in Wellington, Bloomfield and Picton was met with approval by the AoG. According to one of the group's spokespersons, "a guy from the County came by one of our mee(cid:415)ngs, looked at the map of our proposed trans- porta(cid:415)on route in the June Mirror and said, 'Ya know, this might work' then le(cid:332). The next thing you know, there are buses taking people from the park to every which where and to the beer and liquor store too." Queried as to whether the group was offended by not ge(cid:427)ng credit for developing the idea in the first place, the spokesman con(cid:415)nued, "Well, it's going to take some (cid:415)me to build what we have planned, so it's good that the County has started the service as a stop-gap. They may put our name on the side of a bus or some- thing. Anything to reduce the number of cars in that goofy mini-mart liquor store parking lot would be helpful - some days it's so crowded you can't even get your tail- gate down!
