business is white mushrooms with the remainder be- ing brown (only the white are currently grown in the Port Perry location, but they are soon to begin growing brown there as well). Mushroom fungus, mixed with compost and fertil- izer arrives at the plant from the Ashburn location where it is made. There are 25 enormous rooms (5,400 square feet each) with racks that reach to the ceiling and are filled with the compost mixture. Nick explained that mushrooms have a five week growing season from the time they are planted. “They double in size every day,” he added. The planting is staggered so harvesting occurs constantly. In total the company produces 300,000 Ibs. of mush- rooms per week, utilizing a Dutch technology, which allows them to produce six pounds of mushrooms from every square foot of the new, state of the art facility. The new, $12 million building sprang up in only six months. “We were really happy with the construc- tion process and were very glad to be able to hire local contractors, wherever we could,” Nick said. The Port Perry Greenwood Mushroom Farm facility, which opened one year ago this month, operates 365 days a year. Overall the company has 250 employees and is considered one of Canada’s leading mushroom growers. Not only does the company grow and produce mushrooms, they also sell them under their internation- ally respected Windmill Farms brand.
