P >, Crd “7 <_ NY be? Bread, pizza never tasted better than when it’s pulled out of Jim’s oven Have you ever thought about building a twenty-two tonne oven, right in your own backyard? Not likely, but one person has; Prince Albert's Jim Wills did exactly that. In fact, Jim has built many ovens for people right across Canada. The ovens, all of which are wood-fired, are popular in many restaurants that spe- cialize in authentic, Italian style pizza and homemade bread. Jim also teaches people the art of bread and pizza making. How does someone get into the oven business? Well it certainly was not a lifelong dream. Jim was born in Philadelphia. His father, a Canadian from Montreal, worked as a shipwright who was sent to the U.S. to work. When Jim was 14 his family moved back to Canada and settled in Toronto. Jim, unsure of what he wanted to do when he finished school, became a motorcycle mechanic. It was a job he en- joyed and it led him to a short-lived career building race cars. Having had enough of the ‘fast life’, Jim studied and became a teacher of English literature, which was quite a switch from the life of race cars and motor bikes. His fascination of education and learn- ing always stayed with him albeit not as a teacher. It was not long before Jim contin- ued his quest for the ‘perfect’ career. His pursuit landed him in a uniquely differ- ent industry and Jim spent the next year mining hard rock silver in the Yukon, a job which certainly took a great amount of determination. Having had enough of the rough life, Jim decided to get back into the literary field. He had always penned ideas, with vim Wills in the kitchen of his historic home in Prince Albert.
