The 28-year old entre- preneur bought the Murray House Restau- rant in Port Perry on October 30, and already he is planning some changes at the estab- lishment. Mr. Freeman, who orginially hails from - Uxbridge where he was involved in dinner- theatre productions, fell in love with the Murray House the first time he saw it more than two years ago. "I came here for dinner one evening and liked the place so much, I decided then I would try to buy it," he told the Star in an interview last week. He approached Peter Kirk the former owner who initially said the restaurant was not for sale. However, negotia- tions continued and this summer Mr. Kirk and Mr. Freeman reached an agreement. Mr. Freeman, who Mark Freeman, new owner of the Murray House, says he has plans for a few changes, but number one priority will be maintaining the restaurant's high standards for food, service and atmosphere. And he's no stranger to the restaurant indus- 'try as he has owned Bartlett Lodge in Algon- quin Park for the past five years. It's a season- al resort accessible only by water and includes a fine dining room. One significant change that has already been implemented is the "winterizing" of the perch on the east side of the restaurant for year round dining. And Mr. Freeman says he will soon start renovating one of the rooms on the west side into a small, intimate cocktail lounge which will be called "Fiddles." There has been no change in staff since Mr. Freeman took over the business and as for the menu, he says he'll stick with the same format, but the number of selections will be increased. He also has plans to extend the hours, open- ing for Saturday lunch and Sunday brunch and dinner. Even though he has plans for these and other changes, Mr. Freeman stresses that as new owner his first priority is to maintain the standards of fine food, service and unique atmosphere that have been the hall-mark of the Murray House since it opened six years ago.
