What will we do in February? This seems the time of year when the sunny climates call and seed catalogues beckon. Purists insist true chowder contains only seafood, salt, pork, onions, potatoes, water and milk. I side instead with the defined version of chowder as a "tasty"' thick soup made from a variety of food-stuffs and often with a milk base.
