What will we do in February? This seems the time of year when the sunny climates call and seed catalogues beckon. Your travelling may be weeks away or over and its definitely too early to garden - although a good time to make your choice of seeds and plants 'leisurely - for future use. Most of my friends are in a painting mood, at this moment and they've made me feel guilty enough to do some myself. Well - not exactly by myself - my son's do three-quarters - I do the rest. A very good arrangement indeed. Then of course you run into the problem, do I put up the same pictures or ornaments? I've opted to dig out something different, and boy, » do I mean dig. It's a real shocker what we pack rats put away. In fact I now have a box full of absolute treasures - for my friend's annual yard sale - this spring. It's the same old things, back on display in our house. Although I did change the pictures in most frames, no one else may notice, but I will. I also moved everything from where it sat } for sometime, to a new or exchanged setting. This is a lazy person's way of changing the room, but not moving the furniture. It's also the time of the year that I make food not unusual to our family and chowder is the one this month. Now, I eat most kinds, the fami- ly won't - so I make fish or scallop chowders. Purists insist true chowder contains only seafood, salt, pork, onions, potatoes, water and milk. I side instead with the defined version of chowder as a "tasty"' thick soup made from a variety of food-stuffs and often with a milk base. Even preferring the latter, the recipe at the bottom is closer to the purists version. } Serve with a heavy dark bread and chilled butter. Hamburger Ys tsp. oregano '1% c. minute rice 1/8 tsp. marjoram 2 cans tomato sauce Dash of garlic salt % c. grated cheese Salt and pepper 1 c. water Mix together meat, '% c. tomatoe sauce, seasonings. Press into 9 inch pie plate. Mix 11% can tomato sauce, water, rice and % c. cheese. Pour over meat. Cover with foil. Bake 34 hour at 350°. Take out - sprinkle on remainder of cheese. Bake 15 minutes more. Haddock-fileted 1 tbsp. butter 2 slices lean salt pork 14 pt. milk or half & - cubed half 2 .large potatoes, Salt and pepper to sliced taste. 1 large onion, sliced thin Cover fish with water, season, and let come to a boil in pot. Strain, reserve liquid. Cook salt port in skillet until brown. Drain. Add potatoes and onions to fish liquid and boil in pot for 10 minutes. Add fish and salt port and boil two minutes more. Add butter and milk. Cook un- til just short of boiling.
