It takes a little time to melt the chocolate na blend with the milk properly, so the mixture will be smooth and rich, An easy way, and one that practl- oally assures a smooth, deliaious beverage is to make a chovolate syrup and keep it on hand ready for use, Chocolate syrup: Take an ounce of bitter or baking choco- late, scrape or grate it, molt over very low fire, add one cup of boil- ing water, and stir, To this add two cups of sugar and let boil a moment or two, If the mixture does not look smooth and well blend- ed, remove from the fire and beat a little as it cools. Reheat, and ndd a tablespoonful of vanilla extriet, Bot- tle for use, It may be strained if it needs it. To make the chocolate for drink, heat a cup of milk for each service wanted, stir in one fable- spoonful of "the chocolate syrup for each cup of milk, This makes an al- most instant chocolate, that is assur- edly smooth and delicious.
