MOCK APPLE FILLING Combine 2 cups water, 1-1/2 cup sugar, 2 teaspoons cream of tarter. Cook to boiling. Add 30 Ritz Crackers whole. Boil 2 minutes without stirring. Remove from heat. Add 1 teaspoon grated lemon rind and 1 tablespoon lemon juice. Again do not stir. Cool. Pour into pastry lined 9" pie pan. Sprinkle with sugar and cinnamon; dot with butter. Cover with pastry and bake in hot oven (400°) for 15 minutes. Reduce heat to 375° and bake 45 minutes more. In Trout Creek, Irene and Ted McInnes were the guests of Irene's mother, Mrs. Loretta Evers in the Evers Hotel, and attened the marriage of Irene's sister, Cathy Evers to William McAllister on Wednesday, June 25th. Mr. and Mrs. McAllister left to reside in Schediac, New Brunswick. Irene and Ted were the happy recipients of many beautiful wedding gifts from family and friends during their trip east. Mr, and Mrs. J.H, Wellings left Saturday for their home in Winnipeg having visited with their son and daughter-in-law, Jack and Peggy Wellings for the past two weeks.
