To celebrate Nutrition Month in March, Dietitians of Canada has curated 15 recipes in the Nutrition Month 2022 Recipe E-Book (dietitians.ca). Try something new this month like these healthy and tasty eggplant sticks. Baked Eggplant Sticks Preparation Time: 20 mins Cook Time: 20 mins Serves: 4 Recipe Provided By: Anar Allidina, MPH, RD Ingredients • Eggplant, small-medium sized 1 • Olive oil 1-2 teaspoons (5 to 10 mL) • Egg, beaten 1 or 1/2 cup egg whites (125 mL) • Salt and Pepper as desired • Breading mixture: • Almond flour 1/2 cup (125 mL) • Ground flaxseed (also called flaxseed meal) 1/4 cup (60 mL) • Grated parmesan cheese or nutritional yeast 3 tablespoons (45 mL) • Parsley, dried 1 teaspoon (5 mL) • Garlic powder or seasoning of your choice 1 teaspoon (5 mL) *You can swap the almond flour and ground flax- seed for ¾ cup (185 mL) whole wheat breadcrumbs. • Optional garnish: fresh parsley Directions 1. Preheat oven or toaster over to 400°F 2. Cut the eggplant into rounds, 2 cm thick, and slice again lengthwise into spears. In a large bowl, toss the eggplant spears with olive oil, and salt and pepper to taste. Set aside. 3. To make the breading, combine almond flour, ground flaxseed, grated parmesan, dried parsley, and garlic salt. 4. In a separate bowl, whisk egg, or 1/2 cup (125mL) of egg whites and set aside. Dip the eggplant spears in the egg and coat by dip- ping them into the breading. Place the breaded eggplants on a baking tray or air fryer basket in a single layer. 5. Bake for 15-20 minutes, flipping spears half- way through. If using the air fryer, cook until golden brown and crispy, about 15 minutes. 6. Arrange eggplant slices on a plate and garnish with fresh chopped parsley (optional). Serve with marinara sauce to dip and enjoy hot. But many individuals also harbour a desire to keep working after retiring. Whether it's a volunteering gig or a part-time job retirees are looking for, certain qualities can make an opportunity uniquely suited to a post- retirement job. · Flexibility: Retirees may be looking to con- tribute to their communities or simply earn a little spending money, but they will likely still want the freedom to travel or spend time with their families whenever they choose. So flexibil- ity is something to look for in a post-retirement job. This is what makes consultant work so attractive to retirees. In-person hours may not be required of consultants, who can then offer their input while visiting their grandchildren or traveling the world. · Socialization: Though the ability to work from home can make it easier for retirees to earn some extra money, some seniors aren't concerned about their finances but want to work so they can get out of the house. In that case, look for a job that offers the opportunity to socialize and meet new people. · Engagement: A job seniors find engag- ing also is more likely to provide the types of benefits seniors are looking for in post-retire- ment work. For example, researchers at Boston College's Sloan Center on Aging and Work found that seniors who find a job or volunteer- ing opportunity truly engaging are more likely to benefit psychologically from those experi- ences than those whose post-retirement work is not engaging. · Pressure-free: Regardless of what retirees did for a living prior to calling it a career, chances are they dealt with work-related stress. In fact, Statistics Canada reports that 62 percent of Canadian workers say work is their main source of stress. After a lifetime of confronting work- related stress, individuals who want to work in retirement should look for pressure-free oppor- tunities. This is an important quality, as the ASI indicates that stress is linked to increased rates of heart attack, hypertension and other disorders. Various qualities can combine to make for a post-retirement gig that benefits seniors in myriad ways.
