With fresh seasonal fruit, very little sugar and a whole grain, nutty/crunchy top- ping, the result can only be a homemade fruit crisp: simple, nutritious and satis- fying. i Some will prefer to com- APPLE CURRANT CRISP 3/4 c. Dried Currants 3/4 c. Boiling Water 510 6.large Tart Apples (Spys or Cortlands) 1 tsp. Cinnamon 1 tsp. Ground Orange Rind 1 tsp. Ground Cardamon (optional) 1/2 ¢ Chopped Pecans (or walnuts, or pinenuts) crisp stands on its own. The choice is yours. Here -are two possible creations. The wonderful thing about them, is it's hard to make a bad crisp, unless of course you burn it. The ingredients may be altered a little to suit. 1/2 c. Butter 3/4 c. Whole Wheat Flour 1/3 ¢. Brown Sugar Pour boiling water over currants, and set aside for 10minutes, then drain. Meanwhile, combine flour, nuts, sugar and spices, Cut in butter. Slice unpeeled apples and place in a buttered baking dish. Togs in currants and orange find. Spririkle on topping. Bake "uncovered 35 to 40 minutes at 350 degrees. JS pm Strawberry-Rhubarb Crisp 4c. Diced Strawberries 1 Egg, lightly beaten 1/4 c. Brown Sugar 6 tbsp. Whale Wheat Flour 2 tbsp. Orange Juice Combine egg, sugar, flour and juice. Pour over fruit in a butter baking dish. 4 ¢. Diced Rhubarb TOPPING: 1 ¢. Rolled Oats 1/2 ¢. Whole Wheat Flour 1/4 ¢. Oat Bran or Wheat Germ 1 tsp. Cinnam . Pinch of Salt 1/2tsp. Ground Ginger 1/2 c.Butter Combine the topping ingredients and cut in butter. Sprinkle over fruit mixture. Bake uncovered 40 to 45 minutes at 375 degrees. "vanilla.
