Green tomatoes can be used in cooking, or made into pickles or Most of us can't wait to sink our teeth into a large beefsteak tomato at this time of year. The quality of the crop so far is excellent. The tomatoes are plump and firm. Most hand-harvested fresh market tomatoes will be plentiful until the end of September. Popular varieties of the common tomato in Ontario include Pik Red, Pik Rite, Mountain Pride, Jet Star, Pilgrim, Red Star and Ultrasweet. A ripe field tomato should feel heavy and have a slightly supple quality to its surface. Often irregular shaped ones turn out to be the tastiest. Avoid tomatoes with even slight punctures in the skins, as air and bacteria can get in and destroy the tomato's taste. Regular tomatoes are ideal eaten raw. The beefsteak kind is great sliced or usdd in cooking. Plum tomatoes, because of their thicker flesh, are perfect for preserving and making into sauce or tomato paste. Tomatoes should never be refrigerated unless they are overripe and you want to keep them from spoiling. Store them at room temperature away from direct sunlight. Place any that need to be ripened quickly in a brown paper bag with either apples or pears. The fruit releases a natural ethylene gas Parents: tattoo warning Parents are once again being warned that a form of small tattoo called "Blue Star" is being sold to school children. Laced with LSD, Blue Star is a small piece of paper about the size of a pencil eraser. The drug is absorbed through the skin by handling the paper. Other types of tattoos aimed directly at young children are on bright coloured postage stamp size paper with the images of well known characters such as Superman, Mickey Mouse, Clowns, Disney Characters or Bart Simpson. Tammy Eastman of the Family Resource Centre in Whitby distributed more than 250 copies of the warning earlier this month. Contacted by the Citizen, she said she has no knowledge that the LSD laced tattoos have arrived in Region. "But when it comes to young children going back to school in a week, parents can't be too cautious," she said. Some of the tattoos have been found to contain strychnine. If parents or, teachers find these | tattogs they are urged not to handle them. Symptoms in young children can include the following: hallucinations, severe uncontrolled laughter, mood swings, changes in body temperature. that speeds up the ripening process. If you want to remove the skins, dip tomatoes in boiling water for 30 to 60 seconds, then plunge them in cold water. The skins should just slip off. Tomatoes retain their juice best when you slice them from top to bottom. To seed them, cut them in half vertically and gently squeeze over a bowl fitted with a sieve. That way, you can catch and save the juice. Because of their high acidity, tomatoes should be cooked in pans with non-reactive surfaces such as enamelware or stainless steel. ' Gardeners who find they have a lot of green tomatoes left at the end of summer should bring Easy Salsa . 5 large tomatoes, peeled, seeded and diced 1 large green pepper, seeded and diced 1 fresh hot chili pepper, seeded and diced 2 tbep. grated onion 2 thep. chopped parsley 2 small cloves garlic, crushed 1/2 tsp. each oregano and sweet basil salt and pepper to taste.
