The corn kernel consists of an outer hull (mostly roughage) over a layer of hard starch & soft starch. At the centre is the nutritious, protein- rich germ that would become the embryo of a new plant. The protein in corn, like wheat, is lacking in 2 animo acids. When combined with legumes or beans or a small amount of animal protein, corn protein b If freshly picked & properly steamed corn on the cob really requires no seasoning at all. You can steam sweet corn for about 5 minutes by standing the cobs in an inch of water in a tall pot with a tight lid. To preserve its natural corn must be kept cold. Corn is also a reasonably good source of B vitamins, vitamins © A&C, potassium & dietary fibre. The vitamin A content varies with colour; the more yellow the corn, the more vitamin A it contains. Sweet corn has much more sugar than other types. It is intended to be eaten in its immature state, while still tender & juicy. If you buy your sweet corn already cut from the cob, there's a good chance that you are missing the nutritious germ. If you eat it form the cob, be sure to eat the entire kernel. If you freeze kernels, slice close to the cob to get full nutritive value of corn. The husks should be fresh-looking & tassels free of decay & worm evidence. Refrigerate the cobs in their husks until you are ready to cook them (within a few days). Husk just before'cooking (clingy silks can be removed by wiping the cob downward with a clean, damp cloth. Cobs with small, shiny kernels are generally sweeter & more tender than those with large deep yellow, dull kernels. Corn is easiest to prepare & tastes great when steamed. Some people prefer to boil corn in a large pot of water to which a teaspoon of sugar has been added (do not add salt to the water, though, as this toughens the kernels). . A medium-sized ear provides abut 70 calories; a cup of kernels about 135 calories. Grilled Corn on the Cob 8 ears of corn with husks V2 tsp. olive oil ( I have also used 2 tsp. of Italian salad dressing, low calorie, or fat-free) 1 tsp. dried dill Pull down husks of each ear of corn, but don't remove them, but remove & discard silk. Very lightly rub each ear with oil or salad dressing & sprinkle with dill. Replace husks, making sure that all the corn kernels are covered. If necessary, secure the husks with damp kitchen string. Place the ears on grill or barbeque (medium-low heat). Grill for about 20 minutes, flipping the ®_ears occasionally, until cooked through. You may also microwave the corn. Prepare ears as above, then arrange 4 in a square pattern on a large flat plate. Microwave on high for 2 minutes. Turn & rotate the cars. Repeat 3 times for a total of 8 minutes. Microwave remaining ears in the same manner. Approx. 87 cal. each; 1.0 g fat or less. Rev. John Benschop 593 Alma St. Port Perry (1 block south on Old Simcoe Rd., off 7A. West on Alma St.) -B-L- .
