healthstyles deb mcdonald It is normal for small children to refuse to eat all but a few vegetables. Carrots, potatoes, corn & peas are the usual favourites. The more limited a child's selection of vegetables, the harder it may be to get in the needed amounts of vitamins, especially if the child refuses all things green or all things yellow or orange or won't touch salad. Fear not, all is not lost. The following are some suggestions. You can "sneak" nutrient-laden vegetables into foods your child loves & in which they won't be as recognizable. For example, for zucchini it can be used in muffins, breads or pancakes. The same goes for carrots & squashes. You may think that this perhaps is a more "devious" way of teaching your child to eat vegetables, but it's probably only a temporary measure. Periodically, you can try re- introducing a despised vegetable in its more natural form. Chances are your child will eventually come to like it. Have your youngster help prepare the vegetables or dinner salad. Participation encourages consumption. A three-year old can learn to snap beans or shell peas. By 5, he or she may be able to peel carrots & potatoes under supervision. A child of almost any age can tear lettuce or add cherry tomatoes to a salad. Learn some different ways of preparing & serving vegetables to enhafice their taste & eye appeal. Many of us have grown up on mushy végetables that were overcooked or came out of a can. Children prefer vegetables that are brightly deloured & on the crunchy side. This is an opportune time of year to try out a wide variety of vegetables in your menu planning. They are especially tasty if steamed or stir-fried. Colour, taste & vitamin content will be retained if you keep vegetables out of water. Many children who don't eat cooked vegetables enjoy them raw. Try carrots & celery sticks, tomatoes, slices of green or red sweet peppers, even turnips, cauliflower, green beans & peas. Serve them as snacks, appetizers,or in lieu of salad. Many children love dips with raw vegetable; the act of dipping makes eating vegetables more fun. Nutritious dips can be made from yogurt, cottage cheese, or ricotta cheese, buttermilk or mayonnaise with herbs & spices. You might also try powdered dip mixes, or dried soups mixed with yogurt or mayonnaise. Better yet, experiment & create a delicious dip on your own or give the following recipe a try."
