It has been again when all our little ghosts and goblins come out of the woodwork. It has to be one of the most fun events for our kids and all of us that are still kids at heart. A chance to live in a fantasy world for one night. When I grew up we never had store bought costumes. We just used our imagination using discarded clothes and accessories, such as dressy clothes, aprons, shoes, jackets, coats, hats etc. Everything had a use, and after Hallowe'en was over we saved our treasures for some rainy day when they would be dragged out of the closet and new characters would be born. What a great time it was. Oh well... Today I have a recipe for Pickled Pumpkin. Just in time so you have something to do with that funny face after it is all over except burying it in the back yard. I will guarantee that it really tastes good and if you serve it with the rest of your pickles at a With the ... in my family for many years and give it away as Christmas presents each year. It is something you will never find in a grocery store. Here goes: Cut your pumpkin 'in finger length and thumb thickness. Cover pumpkin with 1/2 water, 1/2 white vinegar solution and let stand over night. Drain and dry pieces next day.\Heat 31bs. sugar, 3c vinegar, the peel of 2 lemons. Boil the pumpkin in this solution until the pieces look clear. Then place pieces and syrup in sterilized jars. Excellent. Pumpkin Cookies 1/2 cup butter or margarine 1/2 cup sugar 2 eggs 1 cup fresh cooked or canned pumpkin puree 1-1/2 cups whole wheat flour 2tsp. baking powder V2 tsp. baking soda 1tsp. cinnamon 1/2 tsp. nutmeg 1-14 cups rolled pats 1/2 cup chopped dates V2 cup raisins 1/4 cup walnuts (optional) In a large mixing bow! cream the butter or margarine and sugar together. Beat in eggs and add pumpkin. In another bow! combine flour, baking powder, soda and spices. Stir this mixture into pumpkin mixture. Add oats, dates; raisins & walnuts and combine ingredients well. Drop dough by rounded teaspoonfuls about 2 inches apart on greased baking sheets. Bake cookies in a preheated 375 F oven for about 10-12 minutes. Remove cookies to a rack to cool.
