Their complementary addition will help to tenderize and add life to even the least tender cuts of beef, pork or lamb. A marinade doesn't have to be too elaborate or time-consuming to prepare if you just stick to some of the basic ingredients. Instead of fat, marinade or baste, foods with lemon or lime juice, tomato juice, wine, broth or bouillion. Fruit juice and herb combinations also work well such as orange juice with ginger and garlic, lime juice with dill weed, or lemon juice with thyme. If you have a favourite marinade recipe that contains much oil, you could replace about three quarters of it with fruit juice, wine, broth or water. Just remember food that is marinated should be covered and refrigerated. Be sure to toss the ingredients from time to time. And another word of caution: to | prevent harmful bacteria from contaminating the food, never serve left over marinade with cooked meat. The following marinade and barbeque sauce ideas are less than 40 calories per tablespoon and are low in fat. Enjoy! Sweet and Tangy Marinade (you may use chicken, beef, veal or pork) 3 tbsp. frozen apple juice concentrate, thawed 3 thep. water 2 tbsp. lemon juice or cider vinegar 2 thep. honey, warmed 2 thep. soya sauce, low sodium 1 tsp. rosemary 1/2 tsp. garlic powder 1 thep. canola oil In a bowl, combine all the ingredients well and add your meat to marinate at least a half an hour or up to about three hours in the refrigerator. Easy Vegetable Marinade You may use mushrooms, sweet peppers, zucchini for grilling 1/4 cup vinegar (or wine vinegar) * 1 1/2 tsp. olive oil 1 tsp. Dijon mustard 1 tsp. minced garlic pepper to taste Combine all ingredients in a large bowl. Add vegetables and toss to coat them well. Cover and refrigerate for an hour or longer then grill for a short time to warm through. Your Own Barbeque Sauce (just had to add this at the end to complement your barbeque) 1/2 cup catsup 1/4 cup minced onion 3 tbép. chili sauce 2 tbsp. brown sugar 1 tbsp. olive oil 1 tbsp. lemon juice 1 tbsp. vinegar 1 tsp. garlic powder 1/2 tsp hot pepper sauce (optional) In a medium saucepan, combine all ingredients and bring to a boil; cook another two minutes longer.
