wp 14 -- Scugog Citizen -- Tuesday, May 18, 1993 There's always something new in this kitchen by Heather McCrae The students in the food program at Port Perry High School are cooking up something new every day. The food program, part of technological studies, began in the late sixties with hairdressing, sewing, child care and home nursing. Initially it was a two-year program but over the years has expanded to a four year curriculum with many boys participating in the course. As the course became more popular a few years ago, the food preparation area had to be renovated and expanded. The hairdressing and foods programs became the most popular and child care is still offered. The foods program itself is short order cooking and baking and runs from grades nine to twelve, being offered to the basic and general courses. It's geared to stimulate an interest in good eating habits and an understanding of nutrition. Shirley Edwards is the teacher in the foods program and says "it's hoped that all the students will leave with an interest in food preparation and will be able to plan and prepare nutritional meals." The course also fosters an interest in choosing a career in the food industry by having a unit outlining jobs related to the work force, such as head chef, sous chef, fry cook and baker, Some students have gone on to community colleges and taken various food programs. The junior division does basic food preparation while the senior divisions experiment with ethnic foods and plan their own meals. The students serve meals to teachers and visitors at lunch hour. Prospective teachers who have been interviewed at the school and have had a taste of these delicious lunches hope they are hired on staff as an extra bonus is to be served the delicious baking and cooking from Mrs. Edwards' class. A delicious and equally attractive looking strawberry chocolate bavarian cream dessert had just been finished by Stephen Stich Joanne Boyce and Jennifer Gainey were putting the finishing touches on a four layer black forest cake and Natasha McKinstry was adding a decorafive swirl of whipped cream on top of a chocolate ricotta cheesecake made by herself and Michelle Dean. . All the many variety of breads, biscuits and scones are made on the premises and in some baking classes there are more boys than girls. At the beginning of a new semester, there is a section on personal hygiene adhering -to strict sanitary rules. During class time the boys wear hats, the girls wear hairnets and everyone wears an apron. As one student exclaimed to me, "it's an easy credit, but one that's a lot of fun and you learn a lot by actually making the recipe." One student, who is in RIVERBOAT FISH & Riverboat Daily Lunch Specials were preparing old Fashioned ; her third year of the program works part-time at a popular restaurant in town and is now making soups, sauces and doing some short order cooking, all because of her involvement in the foods program. Each year there's a Christmas breakfast put on for the staff and their families by Mrs. Edwards' students. Arriving at the school by 7 a.m. these pupils serve and prepare the breakfast. Served bv candlelight and music, it's a nice beginning to such a festive season. The students are also kept busy preparing for other special occasions taking place at the school, such as staff meetings, co-op breakfast, the At-Home, fashion show, conferences and department activities. Not only did I enjoy observing the students work on their culinary 'skills but was also able to sample a delicious lunch and acquire some new recipes for my collection as well. 15 WATER'ST., PORT PERRY Closed Tuesdays until Further Notice
