Two quartsmilk, one cup meal, one half cup flour, two heaping spoonsfuls of sugar, one teaspoonful of salt, one nutmeg, ohe tea spoonful butter. Heat the milk boiling hot; remove from the fire and add one-half cup cold milk ; stir in the meal aud other in- gredients and bake in a slow oven three and one half hours, This is a geuuine New Eng. land baked Indian pudding. Raisins or sweet aples sliced thin, may be added to the articles named ; but it is very good pudding withont. The secret of making this pudding lies in having the milk at precisely the right temprature ; if too hot the pudding will not "whey out' properly ; if too cold the meal will not settle at the bottom.
