"But as a cider, you're sort of stuck in a no man's land where laws are outdated and you can't sell to the public directly unless you own your own orchard." Even as it is, Kramar said he's happy being a relatively small producer of quality cider. He remains the only full- time employee on staff . "I'm having a good time, so long- term I'm excited about being a part of growing the cider community and the whole eating-local trend that to me is more than a trend," he said. "It makes a lot of sense to be using apples from your neighbours, rather than having it shipped halfway across the world." As an alternative to beer and wine, cider off ers an assortment of fl avours and food-pairing options, while lever- aging its gluten-free ingredients and appealing to fans of the "grown local" ideology, Kramar believes. "Beer's a bigger industry and always will be," he said. "But cider, I've seen a big diff erence in the past year or two. Now when I go into a bar, everyone's carrying it and it's kind of like they're losing out if they're not. "So I've seen it take that step to a known thing," he said. BUSINESS Cider a popular alternative to wine and beer The University of Waterloo hosts the Velocity Fund Finals this week, where 20 teams of UWaterloo students and recent alumni will pitch their innovative startups for the chance to win a share of $125,000 in seed money and space at the Velocity Garage. Students will have three minutes to propose a solution to a problem, and demonstrate the market opportunity, traction, and ability of the team to suc- ceed. Velocity is a comprehensive entre- preneurship program at Waterloo, and the Velocity Garage is among the top startup incubators in the world. Ten companies will compete for four prizes of $25,000. Judges will present one winner with an additional $10,000 for the top hardware pitch. Another 10 early- stage startups will compete for one of three awards of $5,000.
