In fact, on a recent Friday, the dining room was still full at 2 p.m. "We had to turn a few people away", Heise sighs. What‘s Marbles‘secret? Is it the homey feel of the historic building at King and William in Uptown Waterloo? Perhaps it‘s the "trendy" feel to the place, with the chalkboards listing today‘s special. Or is it the wholesome tasting food, including milkshakes with unusual flavors? Is it Heise and his dedicated staff, who make a point of knowing their regular customers? Perhaps it is all of these little extras that have made Marbles a success. ‘"We have a wholesome menu â€" we don‘t use MSG in anything. We try to get everything fresh when possible," says Heise. "I have a large herb garden at home and use only fresh herbs when I can. Marbles is located in a livery stable or carriage house to the old Alexander Hotel which stood on the corner of King St. and William St. The building is about 120 years old, says Heise, and he‘s working toward a historical designation to help preserve it for the next century. The interior emphasizes the history of the beautiful, and provides a comfortable, warm atmosphere for customers. Heise says most lunch customers come from the Waterloo business community, while the dinner trade is mainly composed of families and younger to middleâ€"aged professionals. The restaurant seats 54 inside and has room for another 50 on the licensed patio outside. "We were the first establishment in Waterloo to have an outdoor cafe," says Heise. "Now everybody‘s got one." Heise thinks it is that kind of regard for service that has made Marbles a success. He points to a waitress that has worked there for eight â€"years, a rarity in the hospitality business. Another just left after ten year of service. And he‘s proud of his culinary skills, too. ‘"‘We have a reputation for having the best salads and burgers in the city. But I personally think many of the other things on the menu are more memorable for being different."
