The Tsudas opened Mikado Foods on July 25. The store is located at 31 University Avenue East, between Church‘s Fried Spaghetti House. Mikado Foods features a wide variety of fresh fish â€" including spring salmon, shrimp, mackerel, flounder, cod, swordfish, sole, and even shark and dolphin, if there is a demand for such specialty items. "If customers want something special, I do my best to get it for them," says Tak Tsuda, who drives to Toronto twice weekly to buy fresh ocean fish. As well as fresh fish, shoppers will also find a selection of popular products for making Chinese and Japanese style meals: bean paste, ginger, seaweed, soy sauces and special noodles, to name a few. The Festival of Arts and Crafts will open at Kitchener Farmer‘s Market Sunday, Sept. 11 at noon featuring Tsuda points out that seaweed is fast becoming a popular vegetable in North America. It is high in minerals and very low in calories. Many people use it as a salad green. But a traditional Japanese use for seaweed is as a main ingredient in sushi, the oriental meal which also features various combinations of fish and rice. Sushi, because of its nutritional value and nonâ€"fattening appeal, is now often included as a regular menu item in restaurants in the U.S., says Tsuda. "In New York there must be 250 restaurants serving sushi." Tsuda, wife Naoko and daughâ€" ters Yoko and Meiko make and sell many different kinds of sushi. According to Meiko, "if you want a party tray (of sushi), we will arrange that for you. Just order it two to three hours ahead of time and we will make up a tray." _ In the last ten days, the Tsudas have expanded their business to include takeâ€"out foods. They now feature fish and chips, shrimp tempura, as well as the popular sushi. All are made from fresh fish. In the very near future they plan to also offer sandwiches and salad plates, made with fresh salmon and tuna and a special John & Mary Albrecht Spread & Py!
