Checking the meat, to find if it is safe to use, has pre- sented difficulties. how- ever. By law, a truck de- livering a load to a packing house cannot be held at the unloading dock for more than three hours. Yet check- ing the bacteriological count by conventional methods takes at least 24 hours. The result has been that unless the meat was obvious- ly dirty or smelled bad the buyer couldn't tell whether it was safe to sell it until long after the delivery truck had driven off. By that time the buyer had at least started to process it. There has been no question of bad meat eventually being sold to the consumer: it would have been identified before that stage. But the bad meat still represented a loss to the meat packer. The problem has been to find a quicker way of test- ing the meat. This Dr. Kempton and his co-workers have done. The method is based on the use of resazurin dye. This is a blue dye but it turns pink if the meat is bad. It has been used for some time. inci- dentally. to test milk. Dr. Alan Kempton, Uni- versity of Waterloo biologist, has played a leading role in the development of a new way of testing meat to find if it's gone bad. Routinely, meat packers buy large quantities of fresh and frozen beef and pork. back and forth from each other. They also buy quan- tities from the United States. “The quicker the dye changes from blue to pink. the worse the meat." says Dr. Kempton. "What the dye actually measures is the enzyme "dehydrogenase.' .. M. Schneider Limited plant in Kitchener. The latter was done by Pat Dodsworth. a UW graduate now serving as plant bacter- iologist at Schneiders. The test found that the Kemp- ton method is accurate; re- suits can be expressed in terms of how many bac- teria there are in the meat. All meat samples contain- ing more bacteria than sug- gested by the International Commission on Microbial Standards in Foods can be detected within three hours, yet no meats containing less than the recommended standards are erroneously rejected. in normal animal tissues. The method had to be quick, easy, accurate, and portable. so it could be moved about a meat packing plant easily. In addition to being faster. the method costs less than the conventional bacteria counting methods. Schnei- ders have not computed the actual dollar savings but they appear to be sub- stantial. "And," says Dr. Kempton. "the consumer has even greater assurance that only good quality meats are used in all their products, _.
