Damian Goriup, owner of Florence Meats, of Oakville, is Ontario' s Finest Butcher for 2017, performing on stage in front of a team of judges and attendees at the Ontario Independent Meat Processors (OIMP) Meat Industry Expo. The Meat Industry Expo was held in Niagara Falls Oct. 20 to 21. The OIMP is the representative voice of the independent meat and poultry processor in Ontario, working closely with agricultural and commodity organizations and various levels of government since 1980. Competitors begin by showcasing their technical knowledge and knife skills during the elimination round in September. The top three then proceed to the finals, this year, at the Meat Industry Expo. In the final round, skill and creativity are important although consumer-appeal is added to the judging criteria. Goriup proceeded to the final round of competition in 2014 and 2015, but couldn' t beat three-time winner Peter Baarda. After taking 2016 off as a competitor but joining as an elimination round judge, Goriup was determined to take it all in 2017. "I cut meat every day in front of my customers but cutting meat in front of your peers is a whole new ball game. The pressure is on," said Goriup, in a press release.
