PEACHY PUMPKIN CHEESECAKE (Serves 12) INGREDIENTS: 1 GRAHAM CRACKER CRUST: 3/4 cup graham cracker crumbs i ! i 1/4 cup ginger snaps - crushed 1/4 cup granulated sugar 4 tbsp melted butter FILLING": 3 pkg each 8 oz. softened cream cheese 6 oz diced fresh peaches or diced canned peaches (well drained) ■ 1 oz peach liquor 1/2 cup light brown sugar 1/2 cup » granulated sugar 5 eggs 1-1/2 cups pumpkin puree 1 tsp cinnamon 1/4asp ground nutmeg 1/4 isp ground cloves 1/4 cup heavy cream 35% Whipped cream » •Peach slices to garnish Connie Patterson, Commercial Food Service Instructor West Credit Secondary School METHOD: CRUST Combine ingredients well and line bottom of a buttered 9" springform pan. Chill. FILLING Beat cream cheese with electric mixer until smooth at medium speed; add Sugars gradually, add eggs one at a time beating well after each addition. Beat in spices, pumpkin, peaches, peach liquor and heavy cream at a lower speed. Pour into buttered 9" springform pan lined with Graham Cracker Crust. Bake in a 325° oven for 1 hour and;20 minutes. Turn off oven and allow cheesecake to remain in oven with dosed door for 30 minutes or longer. Remove cake from oven, lei cool, chill for several hours or overnight. Before serving place spirals of whipped cream along rim of cake and garnish with peach slices.
