"Dieting" could perhaps be labelled the Canadian public's most popular obsession. This year, over 40 million people in the U.S. and Canada will attempt some kind of diet. The result for the vast majority majority is failure. In fact, only 4 percent of all those who attempt diets will be able to maintain their weight loss for more than a year. Consider these points BEFORE starting a diet: Is this diet one that your doctor would approve; If you have a health problem, is it taken into consideration; Could this diet result in a dangerous health condition; condition; Is this diet one that you can live with; Has this diet actually worked for others; Does this diet provide adequate, essential nutrients through a variety of foods; Does this diet teach you how to maintain your weight loss? A diet that cannot meet these criteria provides only a temporary answer. For a nutrionally sound and permanently effective solution, contact your local Diet Center counsellor. Saturates or polyunsaturates...what does it all mean? (NC)--The evidence, either "pro" or "con" polyunsaturated fat, is far from clear. Doubts now exist on the longterm longterm value of using vegetable oils for this purpose. Nevertheless, millions of North Americans have been convinced by commercial advertising and editorial content in the news medit) that they should use unsaturated vegetable oils if they want to lower their risk of heart disease. What is the trade off? When (he first studies 30 and 40 years ago seemed to indicate the advantages of using polyunsaturates, there were few' statistics to back the contentions of either side in this debate. Today, " however, the epidemiological materiel materiel (the numbers) does exist. Studies of large nuihbers of people who changed to vegetable oils has shown that, while deaths from, heart, attacks decreased, overall mortality rates did not fall. And as deaths from heart disease fell, those from cancer began to rise. Recently, there has been a growing number of reports of an increased'incidence of canger in people who have a high intake of polyunsaturated oils. When oils are heated, a process called oxidation occurs. This means the fat is altered and new compounds result, some of which are less usable or. handled differently by the body and, which may be, harmful to. us. What chemists cal I "free radicals" and reactive oxygen that result from the oxidation of polyunsaturated fats will readily jump over to other molecules such as vitamins, oxidiz.ing or burning burning them and changing their structure enough so that they are no longer ABOUT NUTRITION Dr. Vic Amer biologically functional. The arcane language of chemists ' and chemical processes is one thing. Let's not forget THE question. How does this affect me? There is some evidence that the use of large quantities of vegetable oils speeds up the aging process in the skin, probably because of the presence presence of free radicals, and this causes a dramatic increase in wrinklingabout the face. Chromosome damage also has been attributed to polyunsaturated oils. Compounds which prevent free radicals from doing their damage are called "antioxidants". These are found in butterfat and work powerfully to protect butter from oxidation. Potential oils are present in numerous numerous foods such as meat, grains, seeds and even fruits like coconut and palm. As long as they remain an integral part of the whole food, they are apparently healthy and healthful, assuming that one's diet is reasonably reasonably balanced. Once the oil is removed from the plant material, it seems to become susceptible to a host of destructive destructive influences. The point, is of course, that science science must never stop questioning the roles of cholesterol, saturated fat and polyunsaturated fats have to play in the natural development and maintenance maintenance of our healthy bodies.
