It remains meltingly moist and is a perfect take-along because it is topped with a chewy combination of coconut and nuts instead of frosting. Evaporated milk gives a nutritional boost to this delectable cake. MOIST and CHEWY APPLE CAKE (Makes one 13x9x2-inch cake) 2Vz cups all purpose flour cups granulated sugar teaspoons baking soda teaspoon baking powder teaspoons salt cup undiluted CARNATION Regular Regular or 2% Evaporated Evaporated Milk cup water slightly beaten eggs cups cored, pared, diced cooking apples cup packed dark brown sugar cup flaked coconut cup butter cup chopped nuts teaspoon vanilla Combine flour, 2 cups granulated sugar, soda, baking powder and salt in large bowl. Combine Vz cup evaporated milk, water and eggs ; stir into dry ingredients. Stir in apples. Spread batter into greased 13x9x2-inch baking dish. Sprinkle brown sugar, coconut and nuts over top. Bake in slow oven (325°F.) 35 to 40 minutes or until toothpick inserted in centre comes out clean. TURKEY MUSHROOM CHOWDER (Makes about 6 cups) cup cooked onion cup shredded carrot cup chopped celery cup butter cup flour teaspoons chicken bouillon mix teaspoon poultry seasoning IV2 cups water IV2 cups cubed, cooked turkey 1 can (10ounces) undrained sliced mushrooms 1% cups undiluted CARNATION Regular Regular or 2% Evaporated Evaporated Milk Saute onion, carrot and celery in butter in saucepan. Stir in flour, bouillon mix and poultry seasoning. Gradually stir in water. Add turkey and mushrooms with liquid. Cook over medium heat, stirring constantly, until mixture just comes to a boil and thickens. Stir in evaporated milk. Reheat to serving temperature. Pot roast takes on a new look with Pot Roast with Horseradish Sauce. Long, slow cooking makes it extra tender, while onions and fresh tomatoes give it variety. The horseradish sauce is made, creamy with evaporated milk. This is a perfect cold weather meal. POT ROAST WITH HORSERADISH SAUCE (Makes 6 servings) 1 (1.75 kg) pot roast Seasoned flour 2 tablespoons oil IV4 cups (10-ounce can) beef broth V2 teaspoon salt Va teaspoon pepper V4 teaspoon ground thyme , 1 bay leaf 8 small onions, quartered 2 fresh tomatoes 1 cup reserved meat juice 2 tablespoons flour 1 cup undiluted CARNATION Regular Regular or 2% Evaporated Evaporated Milk 2 tablespoons prepared prepared horseradish 2 tablespoons Worcestershire sauce Roll roast in seasoned flour. Brown meat on all sides in hot oil in Dutch oven 20 to 30 minutes. Add beef broth, salt, pepper, thyme and bay leaf. Cover tightly and cook in slow oven (325°F.) 2 to 2Vz hours. Add onions and continue cooking 45 minutes or until meat is tender. Cut each tomato into eight wedges. Arrange tomatoes on roast and cook an additional 10 minutes. Remove meat and vegetables to platter; keep warm. Discard bay leaf. Reserve 1 cup of juice with as little fat as possible. Discard remaining fat and juice. Combine flour and a small amount of evaporated milk to make a paste. Gradually stir in remaining evaporated milk. Pour into Dutch oven. Add reserved meat juice, horseradish and Worcestershire sauce. Cook over medium heat, stirring constantly, until mixture just comes to a boil and thickens. Serve with meat and vegetables.
