Party Cheese Mold (Makes 4M> cups) 2 envelopes unflavour- gelatine 1 cup chicken broth .1 pkg. (250 g) softened cream cheese 1 cup process cheese food spread 2 ' tbsp. minced onion Mi cup finely chopped pecans 3 slices crumbled crisp cooked bacon Dash hot pepper sauce ~/w cup undiluted Carnation Carnation regular or 2 per cent evaporated milk 1 tbsp. lemon juice Soften gelatin in chicken broth in saucepan. Cook and stir over medium heat until gelatin dissolves. Combine cream cheese and process cheese spread; beat until smooth. Slowly blend in dissolved gelatin. Stir in onion, pecans, bacon and hot pepper sauce. Chill until consistency of unbeaten egg whites, about 20 minutes ; stir occasionally. Pour evaporated milk in ice cube tray or 8-inch metal cake pan. Chill in freezer compartment until soft ice crystals form around edges of pan, 10 to 15 minutes. Whip in small mixer bowl on high speed until stiff, about 1 minute. Add lemon juice. Whip very stiff, about 2 minutes longer. Fold into cheese mixture. Pour into 5 cup shallow mold. Chill until firm. Unmold and serve with assorted crackers. Peanut Butter Carrot Loaf 1 cup (250 mL) firmly packed brown sugar Mi cup (125 mL) Skippy creamy peanut butter butter Mi cup (125 mL) Mazola corn oil 2 eggs 2 cups (500 mL) finely shredded carrots 1% cups (425 mL) unsifted unsifted flour 1 tsp. (5 mL) baking powder 1 tsp. (5 mL) baking soda Mi tsp. (2mL) salt 1 tsp. (5 mL) ground cinnamon 1 tsp. (5 mL) ground nutmeg Mi cup (125 mL) milk 1 tsp. (5 mL) vanilla Grease 9x5x3-inch (2 L) loaf pan. In a large bowl mix together brown sugar, peanut butter, corn oil, and eggs until creamy. Add shredded carrot. In a small bowl stir together flour, baking powder, baking soda, • salt, cinnamon and nutmeg. Stir together milk and vanilla. Add flour mixture to peanut butter mixture alternately with milk in three additions beginning and ending with flour. Turn into prepared pan. Bake at 350 degrees F (180 degrees C) oven 1 hour or until inserted knife comes out clean. Cool 10 minutes. Remove from pan. Makes 1 loaf. Fudge is welcome any time and most especially so during the holidays. For delicious variety, try Peanut Kapers Butter Fudge this year. No thermometer is needed and the recipe is about as foolproof as any fudge recipe can be. It's absolutely delicious. Peanut Butter Fudge (Makes about 2 pounds) 2 tbsp. butter Mi cup undiluted Carnation Carnation regular or 2 per cent evaporated milk 1Mi cups sugar M> tsp. salt 2 cups (4 ozs.) miniature miniature marshmallows 1M: cups peanut butter chips 1 tsp. vanilla 1 cup chopped salted peanuts 1 cup (175 g package) semi-sweet chocolate chocolate chips Combine butter, evaporated milk, sugar and salt in a large saucepan over medium heat, stirring occasionally. Bring to full boil. Cook 4 to 5 minutes, stirring constantly. constantly. Remove from heat. Stir in marshmallow, peanut butter chips and vanilla. Stir vigorously 1 minute (until marshmallows melt and blend). Add nuts. Pour into buttered 8-inch square cake pan. Cool. Melt chocolate chips ; spread on fudge. Chill before serving. Pizzawich For each "Pizza": 2 slices bread, buttered on 1 side 1 tbsp. (15 mL) tomato paste 2 tbsp. (25 mL) shredded shredded mozzarella cheese Pinch of Italian seasoning seasoning (basil, oregano, oregano, mixed herbs) Suggested fillings: shredded Cheddar cheese, thinly sliced onion, sliced mushrooms, mushrooms, sliced olives, chopped green pepper, pepper, diced ham, sliced salami. Preheat Sunbeam Snack Factory Sandwich Maker. Spread tomato paste on unbuttered side of one slice of bread; cover with cheese and season to taste. Add one or any combination of suggested fillings.
