Graham Wafer Crumbs x k c. melted margarine Combine above ingedients. Pat into 13 x 9 inch pan. 2 c. Icing sugar 1 c. margarine 2 eggs Mix these ingredients well, then beat for 10 minutes. Spread over wafer crust 2 large bananas 1 large can crushed pineapple Sliced strawberries Drain pineapples well. Make 3 layers using fruit. Top with one envelope of Dream Whip. Garnish with walnuts, wafer crumbs and cherries. Best made a day ahead. Lesley Cochrane Va tsp. cayenne Lightly butter bread slices on both sides. Lay 4 slices on bottom of greased 8 x 8" baking dish. Chop spinach. Toss together spinach, onion, cheese and spread over bread. Cut remaining bread slices in strips or tri-angles and arrange arrange over spinach mixture. Beat eggs with milk. Season. Pour over all ingredients. Cover and refrigerate 1 hour or overnight. Bake in preheated preheated 350 degrees F. oven approximately approximately 40 minutes until top is golden. Garnish with paprika paprika and parsley. Independent, Junes, 1983 SPICY PUMPKIN PIE (No scalding milk) 1 unbaked 9" pie shell 2 cups (19 oz. can) pumpkin 1 can Eagle Brand sweetened sweetened Condensed Milk (15 oz.) 2 eggs 1 tsp. cinnamon x k tsp. salt x k tsp. ginger x k tsp. nutmeg Whipped cream for garnish on top. Preheat oven to 425 degrees F. In a large bowl, combine ingredients for filling; mix well and turn into sheD. Bake 15 min.; reduce oven to 350 degrees F. and continue baking 25 - 30 min. or until knife inserted comes out clean. Cool before serving. Garnish with whipped cream. Dorothy Coles RUM BALLS 1 package (6 oz.) semisweet semisweet chocolate pieces 3 tbsp. com syrup x k cup rum 2 x k cups confectioners sugar 1 cup finely chopped nuts Sugar In the top of a double boiler, over hot, not boiling water, melt chocolate pieces. In large bowl combine: 2 eggs one-third cup sugar Va c. melted butter or margarine margarine Va c. chopped maraschino cherries 1 c. crushed pineapple Va c. cherry juice V2 tsp. almond extract In smaller bowl combine: 2 cups all purpose flour 1 tbsp. B. powder l k tsp. B. soda x k tsp. salt Combine wet and dry. Top with half maraschino cherry. Win Brown QUICK MUSHROOM PATE 2MCUDS % lb. fresh mushrooms 1 small onion Vi tsp. garlic powder Vi -%c. butter 2 tbsp. brandy 1 tsp. lemon juice salt and pepper to taste 1 tsp. crushed dried tarragon 1 large package cream cheese Va c. chopped parsley Chop mushrooms and onion in food processor. Melt butter in skillet. Stir in chopped vegetables, vegetables, brandy ana lemon juice. Cook over medium heat for 5 minutes stirring often. Season with tarragon, garlic powder, salt and pepper. Cube cream cheese. Combine with parsley in food processor. Add mushroom mixture. Process for no more than 10 seconds. Chill or freeze until used. Philadelphia i Cream ' Cheese (room temp.) 1 egg 1 tsp. vanilla 1 (520 g pkgO chocolate fudge or golden cake mix 2 cups chocolate chips Preheat oven at 375 degrees F. Grease cookie sheets; set aside. In a medium bowl, cream margarine and cream cheese: Add egg and vanilla. Gradually stir in cake mix and chocolate chips mixing thoroughly. thoroughly. Drop by scant teaspoon teaspoon onto sheet. Bake for 8 - 10 min. Cool 3 - 4 min. before you remove them from sheet. Makes about 75 cookies if small. You can freeze them if you want. Baking soda x k cup yogurt 1 tbsp. cooking oil Vi tsp. vanilla Vi cup bran 1 cup mashed bananas 1 egg 3 tbsp. honey Mix dry ingredients and, in separate bowl mix bananas, egg, yogurt, cooking oil, vanilla vanilla and honey, then add dry ingredients, do not mix too much, put in muffin tins. Makes 1 dozen. Then bake at 375 degrees for 18 - 22 min. Dorothy Coles WHOLE-WHEAT BANANA BREAD 2 Loaves 1 and one-third cups honey 1 cup unsalted butter 3 large very ripe bananas (mashed) 4 eggs 3 cups whole-wheat flour 1 tbsp. baking powder ^ x k tsp ; salt - V 1 tsp. nutmeg ■ x k cup milk 1 tsp. vanilla Cream honey and butter ; add mashed bananas and beat . well. Add eggs. Combine-dry . ingredients and add to batter , alternately with rnUk, then add vanilla. Spoon into; - 2 S eased 9x5 inch loaf pans; ke at 350 degrees F. for 50 - ; 55 min. Cool in pans on rack for lO.min; remove from pans :;' and cool completely on rack- ; This bread should not be: served until it has been allowed allowed to mellow for 1 day, well - wrapped in foil and left at room temperature. Dorothy Coles PINEAPPLE PUDDING CAKE 1 cup crushed pineapple 1 package layer size yellow cake mix 3 ozs. cream cheese softened lVi cups milk 3 % oz. package instant vanilla pudding mix 1 package dessert topping mix, any kind will do. Drain pineapple, reserving syrup. Prepare cake mix substituting substituting reserved pineapple syrup plus enough water to equal liquid called for. Pour into greased and floured pan 9 x 9 x 2. Bake 350 for 25 to 30 min. With electric mixer, beat cream cheese until fluffy gradually beat in milk, add pudding mix. Beat 2 min. at low speed. Fold in pineapple, spread atop cake. Chill. Cut cake in squares and top with dessert topping. Nine Servings. Servings. Ellen Farrow HUNGARIAN POPPY SEED CAKE 1 cup buttermilk Vi cup poppy seeds x k cup margarine x k cup shortening Vk cup gran, sugar 4 egg yolks 1 tsp. vanilla 2 x k cups flour 2 tsp. baking powder 1 tsp. baking soda 4 egg whites one-third cup gran, sugar 2 tsp. cocoa 1 tsp. cinnamon Soak poppy seeds in buttermilk buttermilk for 20 min. Cream margarine and shortening, l x k cups sugar; beat in egg yolks and vanilla. Mix in dry ingredients alternately with buttermilk mixture. Beat egg whites until stiff; gently fold into batter. Combine one-third cup sugar, cocoa, cinnamon. Spoon about one-third of the batter into a greased angel food tube pan. Sprinkle with x k of the sugar, cocoa, cinnamon, mixture. Spoon in another one- third of the batter, remaining sugar mixture, then remaining remaining batter. Cut through with a knife to marble layers. Bake 350 degrees F. for 1 hour - test with toothpick. M. Brooks CHEESE SOUFFLE 2 x k tbsp. butter 2 x k tbsp. flour 1 c. milk Melt butter, stir in flour. Let cook 2 minutes. Slowly add milk, stirring constantly. Cook until smooth and thickened. Add Vk cups shredded Cheddar Cheddar cheese and stir until melted. melted. Preheat oven 350 degrees. Butter a Vk qt. souffle dish. Separate 4 eggs and add beaten beaten yolks to cheese mixture. Dow MIXED MUSTARD 3 tbsp. dry mustard 1 tbsp. sugar 1 egg Vi cup vinegar Vi cup water 1 tbsp. butter 1. Mix mustard, sugar, egg; add water and vinegar gradually. gradually. 2. Cook over hot water, stirring stirring constantly until thick. 3. Remove from heat ; add butter. Makes approx. 1 cup - delicious on any meat. M. Brooks BROCCOLI DELUXE 1 medium or 2 bunches of broccoli (frozen may be used) 2 onions quartered 4 tbsp. butter 2 tbsp. flour V/i cups milk 2 - 3 oz. pkgs. cream cheese 1 cup sharp shredded Cheddar cheese % cup bread crumbs Cut broccoli up and partially cook in a little water. Place in a casserole dish. In a pan, melt 2 tbsp. butter, blend in flour and salt and pepper. Add milk and cook. Stir until thick and bubbly. Lower heat. Blend in cream cheese until smooth. Pour sauce over broccoli and onions. Top with Cheddar cheese. Melt remaining butter and add bread crumbs. Sprinkle over top of cheese. Bake at 350 for half an hour with lid on and half an hour with lid off.
