12-Orono Weekly Times, Wed nesday, June 13, 1990 1 Cris' Corner Sheif Easy Strawberry Pie 1 L (l quart) fresh strawberries, washed and huiled i baked 23 cm (9 inch) pie shel 300 mL (11/4 cups) sugar 125 mL (1/2 cup) water_ 2 mL (1/ tsp) cream of tartar dash sait 2 egg whites 2 mL (1/2 tsp) vanilia extract Method: Arrange bernies in pie shell. Combine sugar, water and creamn of tartar in a saucepan, cover and bring to boil. Uncover and cook until syrup spins a !thread (115 0C or 240 OF). Add sat to egg whites and beat until stiff. Gradually pour syrup onto egg whites and beat un- tii mixture forms stiff peaks. Add vanilla and pile on pie leaving centre uncovered. Cool but do not refrigerate. Strawberry Almond Float 2 envelopes unflavoured gelatin 75 mL (1/3 cup) sugar 875 mL (31/2 cups) milk 10 mL (2 tsp) almond extract 500 mL (2 cups) fresh strawberries, washed and sliced siiced almonds Method: Combine gelatin and sugar in a saucepan; stir in 125 maL,(112 cup) of miik. Heat just until gelatin dissovies; remove fromn heat; stir in remaining milk and ai- mond extract. Pour into a 1 L (1 quart) moid; chili until firm. Meanwhile, sweeten siiced bernies to taste. To serve, unmold; surround with bernies and sprinkle with almonds. NOTE: This recipe can b e mci1ded' into custard cups for six indivîdual servings.
