(5 m L) Half Ontario Red or Cooking Onion, thinly sliced in rings 1 lb. (500 g) Ontario Asparagus, washed and trimmed Set 1 tsp. (5 mL) of the diii aside for garnish. In bowi, stir together remaining diii, mustard, t tbsp. (15 mL) of the vinegar, sait, pepper and sugar. Whisk in 3 tbsp,. (50 mL) of the oil. Add onion and toss to'coat well. Let stand at room temperature for 30 minutes. Meanwhile, cut asparagus diagonally into 1IV2 inch (4 cm) tengths. In large pot of boiting water, cook asparagus for 4 to 6 minutes or until tender-crisp. Drain and refresh under cold running water. Drain weli and toss with remaining vinegar and oul. (Asparagus can be prepared to this point up to t hour ahead and left at room temperature). To serve, arrange asparagus pieces on large platter or 4 in- dividual satad plates. Top with onion rings. More trees being planted Orono production Up The greening of Southern On- tario has resutted in the Ministry of Natural Resources in increasing production of young trees at their four southern nurseries. Production at the Orono Station is to increase from 6 million trees annuaily to 8 million over a five year ýperiod. . Increases are aiso to take place at St . Williams, Midhurst and Kemptville. In total the in- creases wili miove fromt the presenit 25 million trees to 40 million an- nualiy over the five year period. Glen McLeod, superiniendent at the Orono Tree Nuîrsery, said the need for more trees is due to such events as Earth Day and the Green- îng programs.' People, he said, are become more conscjous of the benefits of planting trees. Co--ordinator and Fur Manager If you tike to-eat snapping turties, or you know somneone that does, there is a new regulation you shouid be aware of. Anyone wishing to harvest snap- ping turties must be the holder of a fishing licence. In Lindsay District, a resident of Ontario or a non- resident may take snapping turties for personal use from July 15 to September 15 onty. No person shahl take more than two snapping turties each day, and no person shaît possess more than five snapping turties. There is a growing concern across Ontario about possible declines in snapping turtte numbers. The new regulation wiIt protect snapping turtles during the spring period when they are mobile and very vulnerable as they seek out nesting areas. It wili also limit harvest for personal use onty and control the number of turties harvested by in- dividuais. This exhibition shouid prove to be an educational and rnteresting excursion for land owvners and anybody with an interest in forests and wildlife.
