gArea pork producers visit marketing board By PAT GUERGIS Examiner Staff Reporter North Simcoe Pork Pro ducers got chance recently to see how their Toronto based marketing board spends the 82 cents it receives for every On tario hog sold through its opera tion About 35 pork producers from the Midland Elmrale and Bar rie areas and some of their fwives travelled by bus to the city as part of tour arranged by the North Simcoe Pork Pro ducers Association First on the tour was visit to Canada Packers one of the 11 packing companies who buy their hogs through the Ontario Pork Producers Marketing Baord OPPMB Here the group saw the car casses hung in cooling rooms methods of cutting the meat 23d watched as it was packag Following the morning tour Ithe producers had lunch at Lil porkies relatively new restaurant on Yorkville Avenue which carries number of pork items on its menu The restaurant has contract with the board in connection with concession booth at the Canadian National Exhibition Each fall during the exhibition Lil Porkies cooks and sells OnA tario Pork The board however has no connection with the downtown store During the afternoon the group visited the head office of the Ontario Pork Producers Marketing Board Hog marketing by electronic auction sometimes referred to as Dutch Auction was demonstrated by Jim Rallings sales manager for the board RIGIIT AWAY They watched as notices from the market yards came into the office were typed out on the electronic teletype machine and quickly purchased by waiting packing haouses The purchase is confirmed immediately and the buyers identity is kept confidential All the market yards know is that the load of hogs it is holding has been sold The former owner of the hogs is paid within week of the sale Tom Smith hog pro ducer from Utopia says he ships his hogs on Monday and usually receives his cheque the following Monday Smith is also one of 15 direc tors on the OPPMB for Simcoe County The North Simcoe pork pro ducers also saw the total sales being tabulated for the day These are kept on huge blackboard recorded as every sale takes place Total sales for 1976 and the months of 1977 already passed are recorded on the board This is done so that the figures of sales can easily be compared from this year and last year In another area pork sales in some states of the USA as well as other Canadian provinces are recorded on another blackboard This years television com mercial package was presented to the producers It consists of seven different 30second humorous presentations of various pork dishes Each dis is representative of different country with the ex ception of roast leg of pork and Canadian redcoat which of course are both Canadian Jerry Bluhm executive secretary to the board said that when they were making the commercials they had decided to use mountie in the commercial for the Canadian Redcoat This was refused by the CRTC who told them mountie could not be used in Canadian commercial NOT IN CANADA Mounties may be and quite often are used in American commercials In the end the commercial was shot using British Grenadier complete with red coat and black fur hat Bluhm explained that all the boards operations are paid for with one per cent levy on each hogsold Rental of the building the computer operations staff wages promotion $90000 last year for research operating costs for the Toronto office and all other expenses incurred in running the market board are paid for with the roughly 82 cents per hog Some money is returned to the countybased divisions has to celebrate spring packers which is not paid out to the producers until the Friday of each week question and answer period followed during which pro ducers took the opportunity to voice some of their concerns Howell explained that 22 cents from the 82 cnets the board receives for each hog sold goes to advertising PROMOTION The group was also told that 10 pork dishes will be featured on the menus of the holiday Inns in Ontario for two weeks in the near future One of the producers asked Howell if it would be possible to leave the address of the Marketing Board on the screeen during 30second commercial Howell replied that this might detract the viewer from the message and the longer commercials are far too costly for their advertising budget The producers who took the trip seemed to be satisfied that the board was spending their money wisely and with pork sales declining along with other red meats it must be com forting to know that someone else is there to find the markets complete the sales and collect the monev Grading system leads to quality The hog on the farm is many steps away from the pork chops ham or bacon found on the dinner plates of nt ario din ners In Canada both the hog producers and the processor benefit from grading system called indexing in the business which prowdes incentives for high quality and also penalizes the producer for poor quality Many changes in the grading system of hogs have come about over the years but in rcc ent years fat conscious society has demanded less and less fat in their diets Studies of pork carcasses breeding and feeding have resulted in the carcass indexing system which was inr plcmented in 1969 and is still in use today Every hog which is slaughtered in Ontario packing houses is inspected by govern ment inspector As part of the inspection it is graded or in dexed Since the indexing system was started there has been good increase in the number of higher indexing carcasses produced in Ontario In other words the fat Before the bogs are inspected they each have an index of 100 The lower the fat content the higher the index If hog has lot of fat it will be indexed less than 100 and the farmer is paid on the lower figure So the incentive to raise lower fat content hogs is built right into the marketing system In 1969 606 per cent of On tario hogs indexed 100 or higher In 1976 74 per cent in dexed 100 or higher an im provement of 14 per cent In 1976 Ontario ranked third in carcass quality to the Maritimcs and British Colum bia RIII MEAT The next phase of the long term program is to get pigs that have more red meat in them The program which started in the middle of 1970 uses ultra sonic testing equipment to pcdict the size of loin eye in prospective breeding animals The two programs back fat measuring and lion eye deter minat ions are bein conducted Simultaneously wit ultrasonic instruments Further progress is expected in this area as research is still going on but it will tal3time For Dependable needed Canadian consumers need to be educated as to the variety of pork cuts and products which are available says John Howell promotion manager for the On tario Pork Producers Marketing Board One of our biggest problems with pork is that people dont recognize cuts of pork Another is that many butchers are not aware of the number of cut possibilities available from side of pork he said Howell was speaking to number of North Simcoe Pork Producers who visited the boards head office in Toronto EDUCATION KII In an attempt to reeducate the public as to the many uses of pork products the board has made up promotion package to be circulated to Ontario schools Primary and secondary teachers will be encouraged to show the presentation to their classes 30minute slide show on what happens from piglet to packer is accompanied by 30 minute film on the possibilities from store to table for pork Printed material in the form of books and pamphlets make up the rest of the presentation IIowell
