By REX BEACH Synopsis Ben Furlong, a young but practical oil man and driller from the Pennsylvania field, drifted into the Texas oil country, broke and looking for work. Finally he fetched up at the Durham home where live an elderly aunt, shortly widowed by the explosion of a powder wagon, and her niece, pretty Betty Durham. . . . Perhaps because cf his smile, Betty cooks some food for Ben and while he eats he learns the aunt, in town on business, has an oil man, Tiller Maddox, sinking an oil wed for her. ... A short 6 inch bolt worked loose from the rigging and is in the bottom of the well. Work has been suspended for days as the crew "fish" for the bolt and operating funds dwindle away. . . . Furlong offers to give a hand but Maddox objects .... Betty insists and overrules Maddox so Furlong fashions a tool which he has just lowered Into the well, hoping to fish out the bolt. . . . Now go on with the story. CHAPTER III Furlong himself handled the rig during this operation, and even Maddox could find no fault with the way he did it. When, after what seemed an interminable time, the wire cable began to stream up out of the depths and wind itself in smooth, black layers upon the drum, the two women pressed in upon the derrick floor. She reappeared in a few minutes with a lantern and a couple of patchwork comforters. These latter she surrendered to Ben, then led the way to the barn. A Strange Feeling Like most farms in the oil country, this one had been allowed to run down, and with the exception of some chickens and a few dispirited cattle there was no live stock left upon it. There still remained, however, some old fodder; it was dusty and musty, but suitable enough for a bed, and Furlong announced that he was delighted with these sleeping arrangements. He set the lantern down and walked to the door with Betty. There he said: "You've been mighty nice to me. I wish that fishing job had been hard- "Why?" "It would have taken longer." The girl's face was dimly illuminated as she smiled up at Furlong. She was the prettiest girl he had ever known and he felt a great liking, a great sympathy for her. Jequier, director of Parfums Weil, one of the largest perfumery houses in. the world, secretions from lowly animals are the "fixatives" or bases oi all glamorous scents. Beginning with one of the fives," a chemist who works with hii nose more than with a pencil and per adds, among other things, thetic as well as pure flower odors If all goes well, he gets a perfui which is "round" -- the term wii which perfumers describe a perfect perfume. Synthetic and Real From Holland, Switzerland and many come the majority of the thetics--as important in a good fume as the pure flower extracts, in the fields surrounding Grasse the Riviera grow almost all of th< world's supply of flowers fi odors. Experienced women stick tl fresh blooms into cakes of hard pi and cow grease, leave them there til the grease has absorbed all of tie odor. Each strongly scented cake is then washed in alcohol. The alcohol in turn absorbs the odor. Freezing Process Lavender is the only blossom not treated in this fashion. It's put in huge vats, literally tramped on until the oil is pressed out. Next to the last step in the making of perfume is the freezing process. At about 18 degrees below zero alcohol gives back what it has absorbed. What it returns is fltered for clarity. Into large storage tanks goes the perfume, to remain there for several months, after which it is bottled, packed, shipped --"round" and perfect. FISH In the Diet During the Lenten season it is the custom in many homes to serve fish at least twice a week. Such adherence to the spirit of the season need not mean a privation however. Fish can be a very delicious change in the diet and there are many ways of serving it. Now is the time to try new variations of your old fish dishes and some new ones which we are giving here. We have given the recipe for Cass erole of Salmon in these columns before but many of you may not have saved it so we are including it. Casserole of Sal~non 2 tablespoons quick-cooking tapioca JA teaspoon salt Dash of pepper 1 cup canned salmon, flaked 1 cup celery, diced 1 tablespoon onion, chopped 1 cup milk 1 tablespoon melted butter 6 to 8 unbaked baking powder biscuits, rolled Vt inch thick. Combine ingredients in order given. Turn into greased casserole; bake in hot oven (425 degree F.) 25 minutes, stirring mixture twice during first 10 minutes of baking. Place biscuits on top of salmon mixture after it has baked 10 minutes; return to oven, bake 12 to 15 minutes longer to bake biscuits. Serves 4. Finnan Haddie Delmonico 1% pounds finnan haddie 3 tablespoons butter 1% tablespoons flour % teaspoon salt 1% cups light cream or top milk Dash of Cayenne Dash of nutmeg 3 egg yolks, slightly beaten 6 slices toast. Wash finnan haddie, soak in cold water 1 hour. Drain, cover with boiling water, and cook slowly until tender. Maddox, it was plain, was acting up- GRAY ROCKS INN on orders, and he took no pains to conceal his dislike for the new hand; nevertheless, Ben accepted the proffer. Aside from the fact that he needed work, his interest in Betty Durham was now sufficient to make almost any sacrifice worth while. In the days thereafter he tried to fathom the peculiar relationship existing between Maddox and the two women, but he did not succeed very well. The driller, it was evident, had his heart set upon Betty, and in his attempt to win her Mrs. Durham was his ally; nevertheless, for some unknown reason the aunt disliked and distrusted the man. About all that Ben could make sure of was the fact that in some manner not readily apparent the oil well was being used by Maddox as a weapon; that somehow it had become the stake in a three-cornered game. Add flour and stir to a smooth paste. Add cream and seasonings and cook until thickened, stirring constantly. Pour small amount of sauce over egg yolks, stirring vigorously. Return to double boiler, place over hot water and cook 1 minute longer. Add finnan haddie to sauce. Serve on toast; garnish with parsley. Serves 6. Baked Halibut 1 slice (1 pound) halibut, 1 inch thick 1 cup milk y2 teaspoon salt 1 cup fine soft bread crumbs Dash of salt Dash of pepper 3 tablespoons melted butter Dash of paprika Place halibut in shallow pan, pour on milk, add salt, and let stand 15 to 20 minutes, turning once. Combine crumbs, salt, and pepper. Add butter, tossing crumbs lightly to mix well. Remove fish from milk. Sprinkle lightly with salt and pepper and cover with 1-3 of crumbs, patting them into fish. Place crumb-side down in well-greased shallow baking pan. Cover evently with remaining crumbs, sprinkle with paprika, and bake in hot oven (450 degrees F.) 15 minutes, or until crumbs are brown and fish is cooked. Serves 4. Molded Ramekin of WhiteSsh 3 tablespoons quick-cooking tapioca % teaspoon salt % teaspoon white pepper Dash of Cayenne 2 cups cooked whitefish, flaked 2 tablespoons melted butter 1 tablespoon parsley, chopped 1 cup milk V2 cup buttered crumbs Combine dry ingredients, fish, butter, parsley and milk. Turn into greased ramekins or custard cups. Cover with crumbs. Bake in moderate oven (350 degrees F.) 35 minutes. Un-mold, if desired. Garnish with parsley. Serve with or without Pimento Sauce. Serve 6. Any left-over white-meated fish may be substituted for whitefish in this recipe, such as halibut, haddock, cod, or bass. Pimento Sauce 2 tablespoons butter 2 tablespoons flour 1 cup milk 14 teaspoon salt Dash of white pepper % cup pimiento, forced through Melt butter in saucepan. Add flour and stir to a smooth paste. Add milk continue cooking and stirring until thickened. Season with salt and pepper. Add pimiento. Makes l1^ cups sauce. Tuna and Celery Souffle 4% tablespoons quick-cooking tapioca lhi teaspoons salt % teaspoon pepper 1 cup celery, finely cut 2 cups milk 1 cup tuna fish, flaked 3 egg yolks, beaten until thick and lemon colored 3 egg whites, stiffly beaten Combine dry ingredients, celery, and milk in top of double boiler. Place over rapidly boiling water, bring to scalding point (allow 3 to 5 minutes), cook 5 minutes, stirring frequently. Add fish and egg yolks. Fold in egg whites. Turn into greased baking dish. Place in pan of hot water; bake in moderate oven (350 degrees F.) 60 minutes. Serves 8.
