"This is my dream. It feels great, but sometimes when 1 wake up in the morning. I can't believe I'm the owner of an establishment. 1 often feel like I'm just an employee coming in doing a job. I can't get used to it. It feels weird, but it feels great." said Fronteddu who bought the downtown Oakville restaurant in August. A native of Qutfbec who first got a job in a restaurant because his dad wouldn't give him money to play video games at age 17. Fronteddu has been the chef at Trattoria Timone for nearly a dozen years. He's still the chef there, it's just that he's the owner now, too. "Everything is the same, or better than before," he assures. Nothing has changed as a result of his new ownership with the exception of some upgrades like washroom renovations, new dinnerware. tablecloths, table candles, wine glasses, a Christmas menu and some poinsettias for the season. Another change, too. is that Fronteddu has purchased more than $100,000 in new wines on the advice of his wait staff, all of whom have a minimum 20 years experience in the busi ness. Fronteddu was bom in Quebec, but grew up in British Columbia before settling down in Guelph and attending high school there. At age 17. he got a job at Jack Tanner's Table at the olde Hide House in Acton. There he washed dishes and prepared salads.
