Taking place at Sheridan College's Trafalgar Road campus from Friday to Sunday (June 2022), Tennessee Fatbacks' Ajay Mehra says he's looking forward to returning for the third year and showcasing his ribs, pulled pork, chicken and meaty Memphis-style macaroni and cheese inspired by his travels down south. "What I really love about ribfest is how excited people get about having the food," said the Oakville resident, who has been a professional ribber for 14 years. "It combines some of my favourite things -- being outside in the summer in Ontario and making food for people who are genuinely excited about it." A labour of love, Mehra, 34, says preparing the food takes hours to create the avours that have been infused into the meat. Besides a special blend of herbs and spices, he said there are also other "mystical and magical" elements that go into it that he simply can't quantify. see Ribfest on p.4 ONLY 25 DAYS LEFT!
