So get some soon, and enjoy theni while they're in season. For fresh eating, choose peaches that are fully ripened. Look for a creamy yellow background color and peaches that yield to gentle pressure, when held in the hand. But don't pinch them - they bruise easily. Ontario peaches are great for eating just as is. Simply wash - and enjoy. They don't even need to be peeled.' That makes them easy to carry along on picnics and for snacks. For bowls of fresh slîced peaches, you may prefer to peel theni. To do this quickly, plunge peaches into boilîng water for 30 seconds, then dip in cold water. Slip off skins. While slicing peaches, sprinkle with a littie lemon juice to prevent darkening. Toss peaches with somne sugar and chili slightly before serving. Fresh peaches can be enjoyed for breakfast, lunch and dinner - ail through the season. Serve themn not only raw, but cook some in your favorite recipes too. Peaches poached in white wine and honey are elegant for brunch. Schnitz Peach Pie (9-inch pie) 5 cups peeled, sliced Ontario peach es (2 lb) 1, 9-inch unba ked pie shel 1/4 cupflour 1/2 cup sugar 3/4 cup sour creamn 210o3 tablespoons brown sugar Arrange peach slices in pie sheil. Combine flour, sugar and sour cream. Pour over peaches. Bake at 220*C (425'F) for 12 minutes. Reduce heat to 1800C (3500F). Continue- baking until fruit is tender and ffiling is set, about 40 minutes. Top with brown sugar and retum to oven for 5 minutes. Cool to roorn temperature before serving. (Pie may bubble over slightly during baking.) Ontario Peach Pie FIlling and Pie For each 9-inch deep dish pie 6 cups slicedfresh Ont ario peaches (about 10 mnedium) 1 teaspoon lemon juice 1 cup sugar 1/4 cupflour 2 tablespoons butter Toss peaches with lemon juice. Stir together sugar and flour, and toss well witli peaches. Place into a 9-inch foul liried deep pie plate. Dot with butter. Cover with foul. Freeze immediately. Next day, lift foil package froni pie plate, leave peach package in freezer, return pie plate to kit chen. When 'ready to bake, prepare pastry for a 2 crust pie. Line the 9-inch deep pie plate with the pastry. Remove foul from the frozen peach filling, fit into pie plate. Cover with top crust, flute, vent'for steam.
