YOUR DIN ING PLEASIRE IHo f frM By MICHAEL KNELL Free Press Staff OSHAWA - You don't normaily expeet a man with only two years ex- perience ini the restaurant business to establish a truly fine dlning establishment. Weil, Bfil-H offman, along with wife Karen, did just that at Hof- fmans at 375 King St. W. Before he became a restauranteur, Hoffman foilowed another line of work which mostly in- volved staring at the same four walls ail the time without much con- tact with people. So,,he turned his love of cooking into a suc- cessful and soul satisfying enterprise. He's bufit his business on one thing - his customers. Since he also doubles as his own executive chef, food is prepared and served according to the customers needs - not how the chef things it should be done. "Our speciality is our customers, " Hoffman says, "«If the customer wants something and it's in our power to do - then we do it." A resident of -West Lynde for the last 12 years, Hoffman counts many Whitby residents among bis .regular patrons and keeps bringing them back because bis is not'an eatmng place. "This is a dinlng establishment," he stresses vehemently. "Not an eating place."1 For lunch last Wed- nesday, I tried bis filet mignon and I swear, it was one of the finest I've ever tasted ini this area. It was cooked exactly to order - medium rare - and the juices just flowed. It was wonder- f ui. is menu is large and boasts great variety. Hoffmans provides a ordering guide for steak describing the various ways it is prepared from rare (red, cool centre) to weil done (well. cooked and dry). At the bottom of theE guide, it gives this note:c agree more. Ris wine list is also extensive 'and includes many fine French, Italian, German and Canadian vintages such as Chauvenet and Henkeli Trocken.
