their nutritious values and timed so that all the baked items come out of the oven at once In this way the oven is made to do the work while the has leisure time or attends to other household duties The meal requires an oven at two different temperatures Bak ed potatoes and pie shell must be baked initially in a very hot oven between and de grees So these items are pre pared first The pie pastry is made with white and whole wheat flour and the potatoes arc brushed with dripping to seal in their vitamin content- While these are baking in the hot oven Miss pre pared the later items for the meal raisin mixture for the pie the ground steak and the grated carrots The raisin mix ture is allowed to thicken on top of the stove the orange pulp and rind not added until the last minute in order not to spoil the vitamin C content by too much cooking After minutes pie crust is removed from the oven the temperature of the oven is re duced to degrees and the pat ties and carrots placed in to bake While they are cooking the pie crust is filled with the raisin The meringue is prepared and spread on the pie and placed in the oven to brown for ten minutes Then all dishes are removed from the oven and served at once In the course of preparing this meal Miss explained that in modern practice meat is cooked at a lower constant tem perature of degrees rather than in a very hot oven This re tains its vitamin content juici ness and flavor Other points noted by the instructor more food value is retained in oven baking than in cooking on top of the stove it is better to cook vegetables in very little water two to three tablespoons rath er than more in order to retain vitamins and flavor milk is an important item in the diet of adults as well as children to pre vent bones becoming brittle and subject to fracture Miss Broadfoot is one of four nutritionists of the Womens In stitute branch and Home Econ omics service of the department of agriculture of which Miss Anna P Lewis is director
