Their beans are produced using two methods: the "natural" process and the "pulped natural" process. The first method consists of drying the fruits without pulping. After the fruit is completely dry, the peel is removed, maximizing the seed's contact with the pulp, for a higher sweetness and body. The "pulped natural" process presses the fruits against a screen, where only the ripe ones are soft enough to be pulped and separated into two seeds, which will pass through the screen. These seeds are dried separately, resulting in a unique flavour. The farm has received two certificates, one from The Brazilian Specialty Coffee Association and the other from Utzkapeh, an independent organization that translates into `Good Coffee.' In order to be certified with The Brazilian Specialty Coffee Association, their farm is audited annually in accordance to the BSCA protocols. This ensures that they are respecting and preserving the environment, while also being socially responsible. Each bag of coffee has a numbered stamp, and the customer can go online at the BSCA website, and trace the coffee back to the coffee grower. In addition to their responsibility to their customers for producing the highest level of quality products, Dias takes great pride in being environmentally responsible as well as socially responsible for the quality of life his employees live in Brazil.
