Of course it also helps that the House of Bouchard Pere Fils has been in the wine business since 1731. 1 remember visiting the Chateau de Beaune in Burgundy a few years ago, but unlike so many other French Chateaux I have visited over the years, this maison stood out clearly not only as a historic site, but also as one of the top growers and negotiants of the area. When I had lunch the other day with Jeanâ€"Francois Bouchard, the ninth generation winemaker in this familyâ€"owned winery, his enthusiâ€" asm for wines was still the same, but tradition clashed somewhat at times with new modern techniques he explained. When Bouchard proudly told me of his accomplishments and explained that winemaking will never be the same, it suddenly occurred to me that absolutely nothâ€" ing was NEW at all. As a matter of fact, his greatâ€"great grandparents probably would say "I told you so". Low yield vineyards, no mechanical pumps, gravityâ€"fed wines, no mechanical filtering and the aging in old oak barrels behind 10â€"meter thick wet sandstone walls; is this not what it is all about, how it began many centuries ago? How else did the great wines of Burgundy get the start that made them among the best of the noble wines? It certainly was not stainless steel, electric pumps or micro filters. Sorry Jeanâ€"Francois, you have just reâ€"discovered how to make outstanding wines even greater. There are a number of excellent Bouchard wines at Vintages, while the regular listed white Bouchard Petit Chablis, CSPC 51466 at $16.80 is my recommendation for today along with the regular listed red Macon Superior, CSPC 41350 at $10.10.
