Add fennel and mushrooms and continue cooking till tender. Add white wine and tomatoes, capers and olives, let simmer approximately 20 minutes (if reducing too much add a little water). Season to taste. Five min- utes before serving add basil and spinach. Clean chicken breasts leaving on the cleaned wing tip. Saute chicken while sauce is simmering. Heat skil- let with olive oil and add the whole clove of garlic. Remove garlic as it begins to brown. Season chicken and place in skillet over moderated heat, skin side down. Cook skin side till golden. Flip and continue cooking. Add balsamic vinegar. Cook until chicken is about 80% done.
