ourselves into an asparagus frenzy steamed roasted frittata with pasta this dish is quick and superb remember dont overcook the grass it should be a bit crunchy 1 pound asparagus spears cleaned and cut into 1 pieces 12 tablespoons olive oil 1 small clove garlic crushed 1 tablespoon butter small handful of sliced almonds squeeze of fresh lemon juice blanch the asparagus in boiling water for 2 minutes rinse with cold water immediately heat the oil and garlic in a large frypan add the asparagus and cook 12 minutes then remove to a serving dish add the butter and almonds to the pan and stirfry until golden add the lemon juice and pour the sauce over the asparagus we try to make sure that we have adequate supplies but when theyre gone theyre gone its best to shop early to avoid
