rjji am 1kq a m r sr md2 wednesday november 2 1983 taste of nutrition marcel doiron vets recall service in woridwarll by christine koserski staff reporter with fighting going on all over the world its easy to forget about the men among us who fought in what now seems a distant conflict the second world war but the veterans remember and theyre bitterly disappointed with waning interest in the tradition of remembrance day it seems the only ones who remember are the vets says angus mcarthur 59 service bureau officer of the markham district veterans association it seems liobody comes out to the parade anymore iboth sides of the street used to be full of people now youre lucky to see a cat and a dog mr mcarthur served in the infantry the queens own rifles for four years and he remembers all too well his experience in europe the thing that sticks out in my mind are the children he says they were literal ly starving theyd come up to us and ask us for chocolate and gum wed give them anything we didnt eat in camp and theyd fight over it like cats and dogs rationed stan courts 67 served in the royal navy from 1940 to 1946 and he says the civilian population in britain were a damned sight worse off than than the soldiers the peo ple were strictly rationed they had maybe one egg a week and had to queue up for meat he remembers particularly a raid on bristol the next day the school my wife taught in was gone and the jewellery store her mother worked in was over in the river mr courts a proud englishman spent most of the war shorebased in the mediterreanean manouevering land and assault craft i couldnt get out quick enough he says in june 1942 he was involved in the infamous malta convoys but thats all hell say about it we dont like to talk about it very much says john harris 72 who served as a corporal in the first canadian armoured brigade of his military medal he says so what i was just in the right place and the right time 10 other guys did the same thing thats why were som- what reticent about it finest meal mr harris remembers with relish the finest meal he ever had on the lady nel son the ship that transported him to a hos pital in england after he was wounded dunng fighting in italy after subsisting on hard tack and bully beef for four years the freshbaked ships bread and fresh canadian butter was the best meal i ever had ive never forgotten it he says with a grin canadian soldiers became the best scroungers in the world liberating chickens calves and pigs across italy and sicily according to mr harris we set up a fine meal once in a small town in italy after the civilians had long left he says the whole troop went to a deserted house found a couple of casks of wine in the basement set the table with beautiful linen cooked a pig and had a candlelight dinner j they were interrupted however by an ominous rap on the door i it was american soldiers with their tommy guns ready he laughs they didnt realize wed already taken over prisoner of war there were no fine dinners for marcel doiron 62 who served in three regiments the royal 22ieme the royal rifles of cana da and the queens own rifles of canada mr doiron spent four years in a japanese prison camp along with about 1600 others taken in the battle of hong kong approximately 400 died according to mr doiron of mistreatment disease and starvation canadians were well known for their defiance of the japanese says mr doiron we were a constant source of annoyment to them even the british were amazed at our audacity some of the prisoners were used as forced labor to build the kaitac airport we used the wrong mixture in the ce ment he says and we saw japanese fighter planes crash because of it markham veterans are observing re membrance day on nov 5 with a service at their club at 10 am followed by aparade some are frustrated by the dwindling of attendance at remembrance day activi ties and services you could have fired a cannon down the street last year and not hit anyone says mr court he remains hopeful the tradition will hold up i dont think itll ever die out he says the next generation will re member poppies the bright red symbol of re membrance will begin appearing this week as the vets start their poppy drive nov 4 everyone should wear a poppy in re membrance of all the canadians involved in the second world war says mr doiron its more important as the years go by people who have their freedom today tend to forget the many men who fought for it as for mr harris hes prepared to fight again id be happy to do it again he says even though im not as physically cap able id fight bccasuc there are some things worse than death shake the salt habit for less sodium 4 by helen fedyck york region i nutritionist 3 e do you taste before you shake or do you automatically sprinkle salt on your food canadians are being encouraged to shake the salt habit and get to know the real taste of food sodium is the part of salt that we are concerned about sodium finds its way into our food in several ways naturally pre sent in food added during processing or added during cooking and at the table sodium is essential to the normal func tioning of the human body it is required for maintaining blood pressure controlling fluid levels in the body and transmitting nerve impulses however there is concern that cana dians eat too much sodium or at least more than they need the reason for this concern is the link between sodium con sumption and high blood pressure or hypertension j the information in this newsletter is for those who want to reduce salt intake and increase good food habits for themselves tives these sodiumcontaining additives are added to preserve enhance flavour control moisture levels and improve tex ture nti rjv about vt to 54 of our place to start is in the grocery store when you shop be aware that as the level of processing increases in a food the amount of calories fat sugar and sodium usually increases try to choose the less processed form of a food eg mock cheddar cheese vs proces- sed cheese sliced roast meat vs ham salami bologna weiners fresh potatoes vs instant fresh cucumbers vs pickles j think about doing more cooking from scratch try buying ingredients to make your own soups casseroles and sauces rather than always relying on commercial ly prepared ones eg macaroni and cheese salad dressings w watch the
